1/2 cup Bacon, chopped

1 package Active Dry Yeast

1 tsp Sugar

1/2 tsp Sea Salt

3/4 cup Warm Water

2 cups Flour

3 tbsp Extra Virgin Oil

1 large Russet Potato, peeled and thinly sliced

1 Clove Garlic, minced

1 tsp Fresh Thyme, freshly chopped

1 1/4 cup Fontina Cheese, shredded

Ground Black Pepper, to taste

1/2 cup Mushroom Stems Pieces

In large mixing bowl, add flour. Create a well in the center of the flour, pour the water into the center.

Next, add 1/2 tsp salt to the flour portion of the bowl only. Do not mix it into the water, it will be mixed later.

Add the sugar and yeast to the water. Begin stirring the yeast in the water.

Then, gradually mix the flour in with the water in small increments. As the dough begins to form, add flour to the surface on which you will be kneading the dough.

Then, take it out of the bowl and continue working it by hand. If the dough is too sticky, add flour in small increments until the dough no longer sticks to your hands or the kneading surface.

Knead the dough thoroughly until it becomes smooth.

Then, place a small amount of extra virgin olive oil on the bottom of a bowl to prevent the dough from sticking and place the dough into the bowl.

Cover with plastic wrap, and leave it out until the dough has completely risen (this usually takes 15-20 minutes). To tell if the dough is fully risen, make a small indentation in the center. If the indentation does not rise, the dough is ready.

Prepare bacon by chopping them into small squares.

Heat up a small non-stick pan and add a tsp of butter. (Butter is optional)

Once the butter has melted or the pan is warm add chopped bacon and fry it until the bacon is brown and crisp.

Cook the potato in a large pot of salted boiling water until tender, about 25-30 minutes, and then thinly slice. Preheat the oven to 450˚F.

In a small bowl, mix together 2 tablespoons oil, minced garlic and 1/2 teaspoon thyme.

Press pizza dough into an oiled 12 inch pizza pan and coat with garlic mixture.

Evenly top dough in cheese and arrange potatoes in an even layer over cheese.

Top with mushrooms, crisp bacon, and salt and pepper, to taste.

Drizzle remaining oil over pizza and bake for 15-20 minutes, or until the crust turns golden and the cheese begins to bubble. Garnish with remaining thyme.

Sit back and enjoy your delicious Bacon Potato Pizza with Mushroom!

Homemade Pepperoni Pizza Ingredients (8 Slices)

Pizza Dough

2 1/3 cups all-purpose flour

2 1/4 tsp. instant yeast

1 1/2 tsp. sugar

3/4 tsp. salt

1/4 tsp. garlic powder

1/4 tsp. dried basil leaves

2 tbsp. olive oil

3/4 cup warm water

Pizza Sauce

3 tbsp. extra virgin olive oil

1 medium onion, finely chopped

1 tbsp. fresh garlic, minced

dried Italian seasoning, to taste

oregano, to taste

1⁄4 cup tomato paste

crushed tomatoes

sea salt, to taste

fresh ground black pepper, to taste

1 tsp. sugar

Pizza Toppings

1 tbsp. extra virgin olive oil

1 clove garlic, finely minced

2 cups shredded mozzarella cheese

20 slices pepperoni

red pepper flakes, optional for serving

1/4 cup Parmigiano cheese, finely shredded, optional for serving

Directions

For the pizza dough…

Combine the instant yeast, sugar, salt, garlic powder, basil, and 1 cup of flour in a large bowl.

Add the olive oil and warm water, using a wooden spoon to stir until the mixture is consistent.

Gradually add another cup of flour.

Add any additional flour as needed, stirring until the dough is forming into a cohesive ball and is beginning to pull away from the sides of the bowl.

Coat a separate large bowl in olive oil.

Lightly dust your hands with flour, shape the pizza dough into a ball, and transfer it to your olive oil-coated bowl.

Use your hands to roll the pizza dough along the inside of the bowl until it is coated in olive oil, then cover the bowl tightly with plastic wrap and place it in a warm place.

Allow dough to rise for 30 minutes or until doubled in size.

Once the dough has risen, use your hands to gently deflate it and transfer the dough to a lightly floured surface.

Knead the dough until it is smooth, about 3-5 times.

Use a rolling pin to work the dough into 12″ circle.

Transfer the dough to a parchment paper lined pizza pan and fold the edges over to form a crust.

Drizzle additional olive oil over the top of the pizza and use a pastry brush to brush the entire surface of the pizza with olive oil, crust included.

Use a fork to poke holes all over the center of the pizza to keep the dough from bubbling up in the oven.

For the pizza sauce…

In a medium-sized saucepan, heat the olive oil and sauté the onions, Italian seasoning and oregano for about 2-3 minutes, stirring until soft but not brown.

Add the minced garlic and sauté for 2 minutes, stirring constantly.

Next, add the tomato paste and stir for 1 minute.

Add in the remaining ingredients; simmering on low heat for about half an hour, stirring occasionally.

Cool and use immediately, and refrigerate or freeze the remainder.

To assemble the pizza…

Preheat the oven to 425F.

While the oven preheats, assemble the pizza by evenly spreading around ¾ of a cup of the sauce over the pizza dough, leaving the crust uncoated.

Evenly spread the mozzarella cheese over the pizza, again, leaving the crust uncoated.

Top the pizza with the pepperoni slices and place it in the oven to bake for 12-15 minutes, or until the crust is golden.

Remove the pizza from the oven, cut it into 8 slices, and serve with red pepper flakes and Parmigiano.

Buon Appetito!

Basil Walnut Pesto

INGREDIENTS (12 Servings)

4 cups basil leaves

3 cloves garlic, peeled

1/2 cup walnuts, roasted

1/2 cup Reggiano Parmigiano

2 tbsp. lemon juice

1 tbsp. lemon zest

red pepper flakes, to taste

1/2 cup extra virgin olive oil, add more if needed

freshly cracked black pepper, to taste

sea salt, to taste

DIRECTIONS

Add the basil, garlic, walnuts, Parmigiano, lemon zest, lemon juice, and red pepper flakes to a food processor or blender.

Pulse the food processor or blender a few times to break down the basil.

Slowly add the olive oil to the processor or blender, pulsing until the olive oil is well blended into the other ingredients and the mixture forms a loose paste.

If you think your pesto is too thick, add additional olive oil, one tablespoon at a time, until you reach the desired consistency.

Season with salt and pepper to personal taste.

This pesto can spice up several dishes. Try tossing with fresh pasta, use it as a spread on bruschetta or a panini sandwich, or as a replacement of tomato sauce on a white pizza. The choice is yours!

Buon Appetito!
