This delicious Chicken Florentine Pasta is packed with flavor from cannellini beans to artichoke hearts, tossed in a tomato sauce with your favorite pasta.

(Prep time 5 Min | Cook Time 0 Min | Serves 1-2)

Ingredients

  • 3 tbsp Extra Virgin Olive Oil
  • 1 lb Chicken Breast, cut into 1-inch chunks
  • 1 tbsp Nonpareil Capers
  • ½ cup Cannellini Beans, drained and rinsed
  • 1 can Quartered Artichoke Hearts (14 oz), drained and rinsed
  • 1 can Italian Crushed Tomatoes (28 oz)
  • 2 cups Spinach, coarsely chopped
  • 1 lb Pasta
  • Fine Sicilian Sea Salt, to taste
  • Ground Black Pepper, to taste
  • ¼ cup Basil, chopped, optional

Directions:

  • Heat oil in a large pan over medium-high heat.
  • Add cut chicken breasts and brown 3-4 minutes, then add capers, beans and artichokes. Cook an additional 3-4 minutes.
  • Add tomatoes, rinse can with water and add to pan, then cover and reduce heat to medium.
  • Simmer 15 minutes, adding spinach to pan during last 5 minutes.
  • Cook pasta according to package directions.
  • Drain pasta, add to sauce and toss to combine.
  • Top with a drizzle of extra virgin olive oil and basil, if desired. Serves 4.
