Classic Apple Pie
INGREDIENTS (8 Servings)
PIE CRUST INGREDIENTS:
- 2 ½ cups all-purpose flour
- 1 cup butter unsalted, cold (2 sticks)
- 1 tbsp sugar
- 1 tsp salt
- 6-8 tbsp water, cold
PIE FILLING INGREDIENTS:
- 8 golden delicious apples, seeded and sliced
- 1/2 cup brown sugar, packed
- 1 tbsp lemon juice, freshly squeezed
- 2 tbsp all-purpose flour
- 1 tsp cinnamon, ground
Add the flour, sugar, and salt to a food processor and mix.
Add the cold butter to the food processor and pulse several times until the pieces of butter are pea size.
Add the cold water starting with 6 tbsp and pulse again.
Test the dough by pinching it between your fingers. If it doesn’t stick together add the rest of the water, a tablespoon at a time until the dough just begins to hold together.
Transfer the dough to a clean work surface and use your hands to shape it into a ball. Do not over-knead. If you over knead you will start melting the butter.
Cut the ball into 2 pieces and shape each piece into a disc. You should still be able to see the pieces of butter in the dough.
Wrap each disc in plastic wrap and refrigerate for at least 30 minutes or up to 2 days.
While the pie crust is refrigerating, mix the sliced apples, lemon juice, brown sugar, cinnamon, and flour.
Remove the dough from the refrigerator, and let it sit at room temperature for up to 10 minutes.
Preheat the oven to 375F.
Roll out one disc using a rolling pin. Add a bit more flour if your dough is sticking to the surface or to the rolling pin.
Roll out the disc until it’s about 1/8 of an inch thick.
Place the pie dough lightly into a pie plate letting about ¼ of an inch hang over the edge.
Add the apple mixture to the bottom crust.
Roll out the second disc exactly like the first.
Cut the dough into 6 even strips, about ¾ of an inch thick.
Gently place 3 strips of dough about ¾ of an inch apart on top of the filling.
Place the remaining three pieces on top and perpendicular to the 3 parallel strips.
Trim the edges of the strips to line up with the underlying pie crust.
Fold back the rim of the shell and crimp the edges to secure the top and bottom crust.
Bake the Classic Apple Pie for 1 hour at 375 F degrees or until the crust is golden and starts to brown.
