This delicious Creamy Chicken Gnocchi Soup dish features potato gnocchi, perfect to make after a busy day or for a special occasion.

(Prep time 5 Min | Cook Time 20 Min | Serves 4)

Ingredients

  • 2 tbsp Butter
  • 1 tbsp Extra Virgin Olive Oil
  • 1 cup Yellow Onion, diced
  • ½ cup Celery, diced
  • 1 cup Carrots, shredded
  • 2 cloves Garlic, minced
  • ¼ cup Flour
  • 2 cups Half-and-Half
  • 1 can Chicken Broth (14.5 oz)
  • 1 tbsp Fresh Thyme
  • 1 cup Fresh Spinach, chopped
  • 1 cup Shredded Chicken Thighs, cooked, diced
  • 1 package Mini Potato Gnocchi (17.6 oz)
  • Sea Salt, to taste
  • Black Pepper, to taste

Directions:

  • In a large pot, add the butter and olive oil.
  • Saute the onions, carrots, celery and garlic over medium heat until tender.
  • Then add flour to create a roux and cook for an additional minute. Slowly add the half-and-half and chicken broth, stir until it starts to thicken.
  • Add in thyme, spinach, shredded chicken thighs and gnocchi.
  • Let simmer for about 5 minutes or until gnocchi is cooked and soup is thickened. For a thinner soup, add more water.
  • Add salt and pepper to taste and serve.
