Ingredients

  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, smashed
  • 1/2 yellow onion, thinly sliced
  • 10 oz sun-dried tomatoes, drained
  • 1 tbsp nonpareil capers, drained
  • 2 bone-in pork chops
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 3 sprigs fresh rosemary
  • 2 tbsp fresh parsley, chopped

Directions

  • Begin by seasoning pork chops with salt and pepper. Set aside 3 crushed garlic cloves. In a cast iron skillet, heat olive oil over medium-high heat.
  • Add the seasoned pork chops, crushed garlic, and fresh herbs to the skillet. Cook the pork chops for about 4-5 minutes on each side until a golden crust forms.
  • Set the cooked chops aside and cover with foil. In a mixing bowl, combine sliced sweet yellow onion, sun-dried tomatoes, and capers. Add this mixture to the skillet and stir until onions begin to turn translucent.
  • Cover the pork chops with the sun-dried tomato mixture, sprinkle with chopped fresh parsley, and serve warm.
