Ingredients

  • 1 large egg
  • 4 thin sliced pork cutlets
  • 1/2 cup breadcrumbs, crushed
  • 1/4 cup Parmesan cheese, grated
  • 1/4 tsp Italian seasoning
  • 1/8 tsp garlic powder
  • 4 oz cherry tomatoes, halved
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1/4 cup vegetable oil
  • 5 oz baby arugula
  • 4 lemon wedges

Directions

  • Lightly sprinkle salt and pepper on all sides of the pork cutlets in a single layer.
  • In a large bowl, season the crushed breadcrumbs with Italian seasoning, garlic powder, and Parmesan cheese. Stir to combine.
  • In another bowl, lightly whisk the egg. Dip the meat in the egg wash, then gently shake off the excess. After that, thoroughly coat the meat with breadcrumbs and shake off the excess.
  • In a large skillet, heat oil over medium-high heat. Gently lay the breaded pork in the pan, taking care to not overcrowd it. Turn the meat over when lightly browned, about 2 minutes on each side or until cooked through.
  • Remove the cooked pork cutlets from the pan and set them on dry paper towels to absorb the excess oil. Let the pork rest for at least 3 minutes before serving. Serve with lemon wedges, cherry tomatoes, and arugula.
