Our Reuben Cheese Dip Recipe is enriched with delicious Swiss Cheese and full of bold tasty flavors to serve as a side or a main meal.

(Prep time 5 Min | Cook Time 25 Min | Serves 2-4)

Ingredients

  • 6 slices Dark Rye Bread
  • 2 tbsp Olive Oil
  • Salt to taste
  • 8 oz Cream Cheese. softened
  • ½ cup Real Mayonnaise
  • 2 tbsp Delicatessen Style Mustard
  • 8 oz Swiss Cheese, shredded
  • ¼ cup Thousand Island Dressing
  • 10 oz Cooked Corned Beef Brisket, sliced thin and chopped
  • 1 cup Sauerkraut, drained

Directions:

  • Preheat oven to 400ºF. Lightly coat a round baking dish with cooking spray and set aside.
  • Cut rye bread into small triangles. Spread on a baking sheet and drizzle evenly with olive oil and a light sprinkle of salt. Set aside.
  • In a large bowl, combine cream cheese, mayonnaise, mustard, cheese, and dressing and mix well. Fold in the corned beef and sauerkraut until well combined.
  • Spread the mixture into the prepared baking dish and bake for 15-20 minutes, until it begins to bubble, and the top is lightly browned.
  • Bake the rye bread triangles for the last 10 minutes, until toasted and golden.
  • Serve warm.
