Ingredients

  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 cup all-purpose flour
  • 1 cup old-fashioned ricotta
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 cups vegetable oil, for frying
  • 1/4 cup powdered sugar, for dusting
  • 1/2 cup warm marinara, for dipping

Directions

  • In a medium mixing bowl, whisk together the ricotta, eggs, sugar, vanilla extract, and lemon zest until smooth and well combined.
  • In a separate bowl, stir together the flour, baking powder, and salt. Add them to the ricotta mixture in step 1 and stir until a soft batter forms.
  • Pour about 2 inches of vegetable oil into a deep skillet or heavy-bottomed pot and heat over medium heat until it reaches 350°F.
  • Using a small cookie scoop or two spoons, carefully drop small portions of batter into the hot oil, working in batches so the pan is not overcrowded. Fry the fritters for about 2-3 minutes per side, turning as needed, until they are puffed and golden brown all over.
  • Transfer the fritters to a paper towel-lined plate or wire rack to drain briefly.
  • Dust the fritters with powdered sugar while they are still warm and serve with warm marinara sauce.
