Ingredients
- 2 tsp fine sea salt
- 1 tsp black pepper
- 1 tsp Italian seasoning
- 1 1/2 tbsp olive oil
- 3 garlic cloves, minced
- 3/4 cup chicken broth
- 3/4 cup heavy cream
- 4 boneless skinless chicken thighs
- 1/3 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes
- 1/3 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/4 cup fresh basil, for garnish
Directions
- Pat the chicken thighs dry and season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for about 5-6 minutes per side until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
- Lower the heat to medium and add the garlic to the skillet. Cook for about 30 seconds until fragrant, being careful not to burn it.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Stir in the heavy cream, Parmesan cheese, and red pepper flakes.
- Add the sun-dried tomatoes and let the sauce simmer for 3-5 minutes until slightly thickened. Stir in the spinach and cook until wilted. Return the chicken thighs to the skillet and spoon the sauce over the top.
- Let everything simmer together for another 2-3 minutes. Garnish with fresh basil and serve over pasta, mashed potatoes, or rice.
