Ingredients

  • 1 lb radiatori pasta
  • 2 tbsp extra virgin olive oil
  • 1 shallot, diced
  • 3 garlic cloves, minced
  • 25 oz tomato basil pasta sauce
  • 15 oz cannellini beans, drained
  • 3 cups kale
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1/4 cup basil leaves

Directions

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
  • While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the shallot and cook for 2 to 3 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
  • Pour in the pasta sauce and bring it to a gentle simmer. Add the cannellini beans and kale and cook for 4 to 5 minutes, stirring occasionally, until the kale becomes tender. Season with salt and pepper.
  • Stir in the heavy cream and let it simmer for 1 to 2 minutes until smooth and creamy. Add the cooked pasta directly into the sauce along with parmesan cheese, tossing continuously until glossy and evenly coated. Finish with basil and extra parmesan cheese.
