Ingredients

  • 16 oz potato gnocchi
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 lb ground chuck
  • 2 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 3 cups baby spinach
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp fresh parsley, chopped

Directions

  • Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3 to 4 minutes until softened, then stir in the garlic and cook for another 30 seconds.
  • Add the ground chuck, breaking it apart as it cooks, and season with salt, pepper, Italian seasoning, and crushed red pepper flakes. Once the beef is browned and fully cooked, drain any excess grease if necessary, then stir in the sun-dried tomatoes.
  • Pour in the beef broth and heavy cream, bringing the mixture to a gentle simmer. Add the uncooked gnocchi and cook for 4 to 5 minutes, stirring occasionally, until the gnocchi are tender.
  • Reduce the heat to low and stir in the parmesan cheese until melted and the sauce is smooth. Fold in the spinach and cook for 1 to 2 minutes until wilted. Taste and adjust seasoning as needed, then garnish with fresh parsley and serve warm.
