Ingredients

  • 12 fresh basil leaves
  • 8 slices prosciutto
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 2 chicken breasts, split into 4 pieces
  • 20 oz artichokes in brine, halved
  • 3 tbsp extra virgin olive oil
  • 1/2 cup Marsala wine
  • 1/2 cup flour
  • 1 cup chicken stock

Directions

  • Place three basil leaves on each piece of chicken and wrap with two slices of prosciutto. Season lightly with salt and black pepper, then place the wrapped chicken in the refrigerator for 10 minutes.
  • Remove the chicken from the fridge and coat thoroughly with flour, shaking off excess. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on both sides, about 4-5 minutes per side.
  • Reduce the heat to medium-low, then cover and cook the chicken for 20-25 minutes, turning occasionally. Transfer the chicken to a plate to keep warm.
  • In the same skillet, deglaze with Marsala wine, scraping up any browned bits. Add the chicken stock and artichokes, then simmer over medium heat for 2-3 minutes. Return the chicken to the skillet, spoon the sauce and artichokes over the top, and cook uncovered for another 5-7 minutes, or until the chicken has reached an internal temperature of 165°F.
  • Plate and serve immediately as is, or over pasta such as spaghetti.
