This delicious Creamy Chicken Gnocchi Soup dish features potato gnocchi, perfect to make after a busy day or for a special occasion.

Ingredients
- 2 tbsp Butter
- 1 tbsp Extra Virgin Olive Oil
- 1 cup Yellow Onion, diced
- ½ cup Celery, diced
- 1 cup Carrots, shredded
- 2 cloves Garlic, minced
- ¼ cup Flour
- 2 cups Half-and-Half
- 1 can Chicken Broth (14.5 oz)
- 1 tbsp Fresh Thyme
- 1 cup Fresh Spinach, chopped
- 1 cup Shredded Chicken Thighs, cooked, diced
- 1 package Mini Potato Gnocchi (17.6 oz)
- Sea Salt, to taste
- Black Pepper, to taste
Directions:
- In a large pot, add the butter and olive oil.
- Saute the onions, carrots, celery and garlic over medium heat until tender.
- Then add flour to create a roux and cook for an additional minute. Slowly add the half-and-half and chicken broth, stir until it starts to thicken.
- Add in thyme, spinach, shredded chicken thighs and gnocchi.
- Let simmer for about 5 minutes or until gnocchi is cooked and soup is thickened. For a thinner soup, add more water.
- Add salt and pepper to taste and serve.
