Ingredients

  • 1 eggplant, sliced lengthwise
  • 12 oz roasted red peppers, drained
  • 4 oz fresh basil leaves
  • 1/4 cup basil pesto sauce
  • 1 long ciabatta loaf, sliced lengthwise
  • 4 slices of baby Swiss cheese
  • 1/4 cup fancy giardiniera, chopped
  • 1 tsp extra virgin olive oil
  • 8 slices of prosciutto

Directions

  • Grill the eggplant slices for about 4-5 minutes on each side until they are tender with grill marks, then set aside. If you don’t have a grill, you can cook the slices in a stovetop grill pan or skillet over medium heat for the same amount of time, turning once, until they’re golden and tender.
  • On the top half of the ciabatta loaf, spread pesto. On the bottom half, start layering the ingredients. First, spread the giardiniera, followed by the eggplant slices, roasted red peppers, cheese slices, prosciutto, and fresh basil leaves.
  • Lightly drizzle olive oil on top of the ingredients before placing on the top half of the ciabatta loaf. Cover the sandwich with parchment paper and place a heavy cutting board or dish on top. Weigh it down for 10 minutes to compress the panini, then cut and serve.
