Ingredients
- 4 Fresh Grade “A” Chicken Leg Quarters
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp Italian seasoning
- 1 tsp dried oregano
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 lb baby potatoes, halved
- 1 large red onion, cut into wedges
- 1 cup chicken broth
- 1/2 cup Pecorino Romano Grated D.O.P. Wedge, freshly grated
- 2 tbsp fresh parsley, chopped
- 1 lemon, cut into wedges
Directions
- Preheat oven to 400°F. Pat the chicken leg quarters dry and place them in a large roasting pan.
- In a small bowl, combine olive oil, garlic, Italian seasoning, oregano, salt, and pepper. Rub the mixture over the chicken.
- Arrange the potatoes and red onion around the chicken. Pour the chicken broth into the pan.
- Roast for 45 to 50 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F.
- During the last 10 minutes of cooking, sprinkle half of the Pecorino Romano over the chicken and potatoes.
- Remove from the oven and let rest for 5 minutes. Garnish with parsley and the remaining Pecorino Romano.
- Serve with fresh lemon wedges and enjoy!
