Ingredients
- 1 lb penne pasta
- 2 tbsp extra virgin olive oil
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 12 oz sweet pepper strips
- 1/2 cup red wine
- 28 oz crushed tomatoes
- 4 sausage links, sliced
- 2 tbsp concentrated tomato paste
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper
- 1/4 cup Parmesan cheese, grated
- 2 tbsp fresh parsley, chopped
Directions
- Cook the pasta in a large pot of salted boiling water until al dente. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook for 5-7 minutes until browned on both sides. Remove and set aside.
- In the same pan, add the onion and cook for about 5 minutes until it becomes soft. Stir in the garlic and peppers and cook for another minute.
- Add the sausage back in and deglaze the pan with red wine, scraping up any browned bits from the bottom. Let it simmer for 2 minutes, then stir in the tomato sauce, tomato paste, Italian seasoning, and red pepper flakes. Let the sauce simmer for 10 minutes to develop the flavor, then add in the cooked pasta and toss to coat. Top with grated Parmesan and fresh parsley, then serve warm.
