- 1/3 cup flour
- 2 large eggs, beaten
- 1/4 cup breadcrumbs
- 1/4 cup Parmesan cheese
- 4 pork cutlets
- 2 tbsp olive oil
- 2 tsp Italian seasoning
- 1 cup marinara sauce
- 3 oz mozzarella cheese, shredded
- 2 tbsp fresh parsley, minced
- 1 tsp ground black pepper
- 2 tsp sea salt
Directions
- Preheat your oven to 400°F. Pound the pork cutlets with a mallet to tenderize the meat, then season on both sides with salt and pepper.
- Place the flour and eggs into two separate dishes. Combine the breadcrumbs, Parmesan cheese, and Italian seasoning in a third dish.
- First, dip each cutlet into the flour and then the egg mixture, letting any excess drip off. Coat the cutlets with the crumb mixture and set aside.
- Heat olive oil over medium-high heat in a large skillet. Fry the cutlets for 2 minutes per side, then remove them from the heat. Transfer the cutlets to a baking dish before topping each with 1/4 cup of marinara sauce and then with mozzarella cheese.
- Bake the cutlets for about 6 to 8 minutes until the sauce is warmed and the cheese has melted, then top with parsley and serve warm.
