Ingredients

  • 2 large eggs
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1/2 cup all-purpose flour
  • 1 tbsp water
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 4 pork cutlets
  • 1/2 cup olive oil
  • 4 cups fresh arugula
  • 1 cup cherry tomatoes, halved
  • 4 lemon wedges, for serving

Directions

  • Place each pork cutlet between two sheets of plastic wrap and gently pound them with a meat mallet until about ¼ inch thick. Season both sides with salt and pepper.
  • Set up three shallow dishes: one with flour, one with beaten eggs mixed with water, and one with breadcrumbs combined with Parmesan cheese. Dredge each cutlet in flour, shaking off excess, then dip it into the egg wash, and finally coat it evenly in the breadcrumb mixture. Set aside on a plate.
  • Heat about ¼ inch of olive oil in a large skillet over medium-high heat. When the oil shimmers, add the cutlets, working in batches if necessary. Cook the cutlets for 2–3 minutes per side, until golden and crisp. Transfer to a paper towel–lined plate to drain.
  • Arrange the cutlets on a platter. Toss the arugula lightly with a drizzle of olive oil and a pinch of salt, then add the halved cherry tomatoes and toss again. Serve immediately with lemon wedges.
