Ingredients

  • 1 cup chicken broth
  • 4 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes
  • 2 lb chicken breasts
  • 12 oz Portobello mushrooms
  • 15 oz cannellini beans
  • 2 tsp Italian seasoning
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 3 tbsp extra virgin olive oil

Directions

  • Preheat oven to 375°F. Season the chicken with salt, pepper, and Italian seasoning.
  • Heat a large skillet with olive oil over medium-high heat and sear the chicken until it’s golden brown. Set aside when done.
  • In the same skillet, deglaze with chicken broth and add the garlic, sun-dried tomatoes, and mushrooms. Sauté until the garlic is fragrant and the mushrooms are slightly browned.
  • Mix in the cannellini beans and return the seared chicken to the skillet. Simmer for an additional two minutes. Transfer the skillet to the oven and cook until the chicken reaches an internal temperature of about 165°F. Plate and serve.
