Ingredients
- 6 garlic cloves
- 14 oz spaghetti pasta
- 10 oz sopressata salami, sliced
- 1/2 cup Parmesan, grated
- 1/3 cup extra virgin olive oil
- 1 tsp chopped Calabrian chilis
- 1/4 cup parsley, chopped
- 1 tsp ground black pepper
Directions
- Start by filling a large pot with water and bring it to a boil. Once the water is boiling, add the spaghetti and cook according to the package instructions until it becomes al dente. Reserve half a cup of the pasta water before draining and set aside.
- Slice the salami into 1/4 inch pieces, then thinly slice the garlic cloves. Heat olive oil in a large pan over medium-high heat. Add the salami and garlic and cook for about 3-5 minutes, stirring occasionally.
- Decrease the heat to low and add the cooked pasta with the reserved pasta water. Then add the Parmesan and Calabrian chilis. Toss and stir the pasta to evenly coat with the sauce.
- Serve the pasta in small bowls and top with parsley, ground black pepper, and more Parmesan if desired.
