Marinating Time 1 Hr | Cook Time 20 Min | Serves 6

Ingredients

  • 1 cup dry red wine
  • ½ cup cut sun-dried tomatoes, drained
  • ¼ cup fresh basil leaves
  • 4 cloves garlic, peeled and crushed
  • 1 tsp sea salt
  • ¼ tsp crushed red pepper
  • ½ cup extra virgin olive oil
  • 3 lb top sirloin steak

Directions

  • In a food processor, combine wine, sun-dried tomatoes, basil, garlic, salt, and crushed red pepper. Pulse until chunky paste forms, then scrape down the sides of the bowl.
  • With the machine running, pour olive oil in a steady stream. Put the steak in a resealable bag and pour in the marinade. Marinate in the fridge for one hour.
  • Preheat oven to 425°F. Remove steak from marinade and place in a roasting pan. Roast until medium rare, about 20 minutes.
  • Remove the steak and place it on a cutting board, letting the meat rest for 5-10 minutes. Thinly slice and serve.
