Ingredients
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp crushed red pepper flakes
- 28 oz crushed tomatoes
- 1 1/2 lb boneless skinless chicken thighs
- 1/2 cup chicken broth
- 1 tsp fine sea salt
- 2 tsp ground black pepper
- 1/4 cup fresh basil, chopped
- 3 oz grated Parmesan
Directions
- Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the chicken thighs and sear for about 4-5 minutes per side until golden. Transfer the chicken to a plate and set aside.
- Reduce the heat to medium and add the minced garlic and red pepper flakes to the pan. Stir for about 30-45 seconds until fragrant. Sprinkle in the oregano and cook for another few seconds.
- Pour in the crushed tomatoes and chicken broth, stirring to combine. Use a wooden spoon to scrape up any browned bits from the bottom of the pan. Taste and adjust with salt and pepper as needed.
- Return the chicken thighs to the skillet, nestling them into the sauce. Spoon sauce over the tops, cover, and reduce the heat to low. Let it simmer for about 20 minutes, or until the chicken is cooked through and tender.
- Remove the lid and let the sauce simmer for another 3-5 minutes. Stir in the fresh basil and finish with grated Parmesan cheese.
