- 2 tbsp olive oil
- 4 tbsp butter
- 10 sage leaves
- 2 garlic cloves, crushed
- 4 bone-in pork steaks
- 1/2 cup dry white wine
- Juice of 1/2 lemon
- 2 tsp fine sea salt
- 2 tsp ground black pepper
Directions
- Pat the pork steaks dry with paper towels and season generously on both sides with salt and pepper. Set aside.
- Heat olive oil in a large skillet over medium-high heat until shimmering. Add the steaks and sear for about 3-4 minutes per side, until deeply golden. Transfer to a plate once browned.
- Lower the heat to medium and add the butter, sage leaves, and crushed garlic to the pan. Let the butter melt for about 1 minute, while stirring gently, so the sage crisps slightly.
- Pour in the wine and scrape up browned bits from the pan. Let the liquid simmer for 2-3 minutes so it reduces slightly.
- Return the steaks to the skillet. Spoon sauce over them, cover, and cook for 8-10 minutes (flipping once halfway through) until the internal temperature reaches at least 145°F.
- Remove the pan from the heat, squeeze in lemon juice, and spoon the sauce over the steaks again. Let them rest for 3 minutes before plating and serving.
