Ingredients

  • 4 large portobello mushrooms
  • 1 cup fresh mozzarella, sliced or cubed
  • 1/3 cup basil pesto
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1 tbsp balsamic glaze
  • 3 oz fresh basil, for garnish

Directions

  • Preheat your oven to 400°F and line a baking sheet with parchment paper. Gently clean the portobello mushrooms, then carefully remove the stems and use a spoon to scrape out the dark gills from the underside, creating a deeper cavity for filling.
  • Lightly brush both sides of each mushroom cap with olive oil, ensuring they are evenly coated, then season with salt and pepper. Arrange the mushrooms on the prepared baking sheet and bake for 8-10 minutes.
  • Remove the mushrooms from the oven and carefully blot away any excess liquid with a paper towel. Spoon a generous layer of pesto into each mushroom cap, then add the minced garlic and fill each mushroom with fresh mozzarella. Sprinkle grated Parmesan cheese over the top.
  • Return the stuffed mushrooms to the oven and bake for an additional 10-12 minutes, until the mozzarella is fully melted and the mushrooms are tender.
  • Remove the mushrooms from the oven and let them cool slightly before finishing with a drizzle of balsamic glaze and a garnish of fresh basil.
