Ingredients

  • 3 tbsp olive oil
  • 6 garlic cloves, smashed
  • 4 sprigs fresh rosemary
  • 3/4 cup dry white wine
  • 4 bone-in pork chops
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 2 tbsp unsalted butter
  • Juice of 1 lemon
  • 3/4 tsp red pepper flakes
  • 2 oz fresh parsley, chopped

Directions

  • Pat the pork chops dry with paper towels, then season generously on both sides with salt and black pepper. Let them sit at room temperature for about 10 minutes while you prepare the other ingredients.
  • Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for about 4-5 minutes per side until nicely browned. Remove from the pan and set aside.
  • Reduce the heat to medium and add the garlic, rosemary, and red pepper flakes. Cook for about 1 minute until fragrant.
  • Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes, then stir in the butter and lemon juice.
  • Return the pork chops to the skillet and spoon the sauce over them. Let them cook for another 3-5 minutes until fully cooked through.
  • Remove from the heat, spoon extra sauce over the top, and garnish with chopped parsley before serving.
