Baked Chicken Broccoli Skillet
INGREDIENTS (8 Servings)
- 5 lbs. boneless skinless chicken breast
- 6 tbsp fresh lemon juice
- 6 tsp fresh lemon zest
- 2 tsp lemon pepper
- 2 tsp garlic powder
- 2 tsp sea salt
- 1/2 tsp black pepper
- 1/2 cup low sodium chicken broth
- 8 cups broccoli, chopped
Preheat oven to 400F.
In a small bowl, combine lemon pepper, garlic powder, salt and pepper. Set aside.
In another small bowl or glass measuring cup, combine lemon juice, lemon zest, and chicken broth. Set aside.
Cover chicken with plastic wrap or place in a gallon-size sealable bag.
Pound chicken with a mallet until it is uniform in thickness, about 3/4″ thick.
Sprinkle both sides with the lemon pepper seasoning mixture.
Melt 2 tbsp. of butter in an oven-safe skillet.
Turn heat to medium-high and place chicken in the skillet.
Cook for about 4 minutes on each side; or until chicken is golden brown.
Turn off heat and gently pour lemon/chicken broth mixture around the chicken, not on top of it. Arrange broccoli pieces around the chicken in the skillet.
Set in the oven for 10 minutes, or until chicken is cooked through, 165-175F.
Serve hot, spooning the sauce from the skillet over each piece of the Baked Chicken Broccoli Skillet as it’s plated.
