Simple Whole Roasted Chicken
INGREDIENTS (6 Servings)
- 4 lb. whole chicken, giblets removed
- 2 tsp sea salt
- 1 tsp white sugar
- 1/8 tsp cloves, ground
- 1/8 tsp allspice, ground
- 1/8 tsp nutmeg, ground
- 1/8 tsp cinnamon, ground
- 5 cloves garlic, crushed
Preheat oven to 500F.
In a bowl, mix the salt, sugar, cloves, allspice, nutmeg, and cinnamon. Rub the chicken with the mixture.
Stuff the chicken cavity with the crushed garlic.
Place the chicken, breast side down, on a rack in a roasting pan.
Roast 15 minutes.
Reduce heat to 450F and continue roasting 15 minutes.
Baste chicken with pan drippings.
Reduce heat to 425F and continue roasting 30 minutes or until the internal temperature is 180F.
