- 1 lb Brussels sprouts, halved
- 4 oz pancetta, diced
- 2 tbsp extra virgin olive oil
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 1/2 cup balsamic vinegar
- 2 tbsp sugar

- Preheat the oven to 400°F. In a large bowl, toss the halved Brussels sprouts and diced pancetta with extra virgin olive oil, salt, and black pepper.
- Spread the mixture on a baking sheet and roast for 20-25 minutes, until the sprouts are golden brown and the pancetta is crispy.
- In a saucepan, combine balsamic vinegar and sugar. Heat the mixture until the sugar dissolves, then simmer to reduce it by half and create a thick, syrupy glaze.
- Once the Brussels sprouts and pancetta are done, transfer them to a serving bowl and drizzle with the balsamic glaze. Toss gently to coat everything in the glaze.
