Ingredients
- 1 tbsp minced garlic
- 1 tbsp extra virgin olive oil
- 1 tbsp rosemary
- 2 lb pork tenderloin
- 1/4 cup granulated sugar
- 1/4 cup balsamic vinegar
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1/4 cup water
- 1 tbsp cornstarch
- 2 tbsp soy sauce
Directions
- Preheat your oven to 375°F. Line a large pan with heavy-duty foil and place the pork in the pan. In a small bowl, combine the garlic, olive oil, salt, and pepper. Rub the mixture over both tenderloins. Bake the pork in the preheated oven for 15 minutes.
- While the pork is cooking, place the sugar, balsamic vinegar, and soy sauce in a small saucepan over medium-low heat. In a small bowl, mix the water and cornstarch, then add to the saucepan. Heat until the mixture begins to bubble and thicken. Spoon a small amount of glaze onto each tenderloin after the first 15 minutes of cooking.
- After adding the glaze, return the pork to the oven and continue cooking for an additional 15 minutes, or until the internal temperature has reached at least 145°F. Remove the pork from the oven and allow it to rest for 5 minutes.
- Slice each tenderloin into 1-inch medallion pieces and return them to the pan. Warm the remaining glaze over low heat and pour it over the sliced pork. Top with fresh rosemary and serve immediately.
