Ingredients

  • 3 shallots, diced
  • 4 garlic cloves, minced
  • 8 oz beef sirloin, cut into 1/2-inch pieces
  • 19 oz cannellini beans, drained
  • 2 tbsp lemon juice
  • 1 tbsp fresh thyme
  • 1 tsp ground black pepper
  • 10 oz sun-dried tomatoes, julienned
  • 2 tbsp Balsamic Vinegar of Modena
  • 6 tbsp Filippo Berio olive oil
  • 1/2 cup fresh parsley, chopped
  • 1 packet of active dry yeast
  • 3/4 cup warm water
  • 1 tsp honey
  • 2 cups flour
  • 1/2 tsp sea salt
  • 1/2 tsp sugar

Directions

  • Mix flour and salt together and add to a mixing bowl. Create a well in the center and pour water into the well. Add the sugar and yeast to the water and mix thoroughly. Gradually mix the flour into the water in small increments; as it forms, take the dough out of the bowl and continue to work it by hand on a floured surface.
  • Place a small amount of olive oil on the bottom of a bowl and place the dough into the bowl. Cover with plastic wrap and leave out for about 15-20 minutes until the dough has completely risen.
  • Preheat your oven to 400°F. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shallots and 1 garlic clove and sauté for approximately 1 minute. Add the beef and sauté for an additional minute, then remove from the heat and set aside.
  • In a food processor, puree the beans, remaining garlic, 2 tablespoons of olive oil, lemon juice, and thyme. Season with salt and pepper and set aside. Roll out the dough to a rectangular shape and place it on a floured baking sheet, then bake for 5 minutes.
  • While the dough is baking, mix together the tomatoes, remaining oil, balsamic vinegar, honey, parsley, salt, and pepper. Then, remove the flatbread from the oven and flip. Spread bean puree over the dough and top with the beef, shallots, garlic, and tomato mixture. Bake for another 25-30 minutes, then cut and serve warm.
