Ingredients
- 1 tbsp olive oil
- 1 ½ tsp paprika
- ¼ tsp chipotle chili powder
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1 ¾ tsp kosher salt, divided
- 1 tsp black pepper, divided
- 3 lb boneless pork ribs
- 1 cup ketchup
- 1 tbsp molasses
- ¼ cup apple cider vinegar
- ½ tbsp Worcestershire sauce
- ½ tbsp chopped chipotle chiles in adobo sauce
Directions
- Preheat oven to 300°F. Coat the bottom of a sheet pan with olive oil. Stir paprika, chili powder, garlic powder, onion powder, 3/4 tsp salt, and 1/2 tsp of pepper in a small bowl until blended. Sprinkle all sides of the ribs with spice mixture, and place the ribs in a single layer in the prepared sheet pan. Cover tightly with aluminum foil, and bake for about 1 1/2 to 2 1/2 hours in a preheated oven until ribs are tender and can be pulled apart with a fork.
- Meanwhile, whisk ketchup, molasses, vinegar, Worcestershire, chopped chiles, and the remaining 1 tsp salt and 1/2 tsp of pepper into a medium bowl. Pour half of the sauce into a small bowl and reserve for serving.
- Remove ribs from the oven, and increase oven temperature to 450°F. Uncover the ribs, and drain any accumulated juices from the sheet pan. Baste ribs with remaining sauce. Bake ribs at 450°F for about 20 minutes, uncovered, until ribs are very tender and the sauce has become sticky and slightly glazed. Serve ribs with reserved sauce.
