Ingredients
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, sliced
- 14 oz fire-roasted diced tomatoes
- 1/2 cup parmesan cheese, grated
- 1/4 tsp crushed red pepper
- 1 tsp Italian seasoning
- 1 tsp fine sea salt
- 1 tsp ground black pepper
- 15 oz cannellini beans, drained
- 2 cups baby spinach
- 1/4 cup fresh basil leaves, chopped
- 2 cups mozzarella cheese, grated
Directions
- Preheat your oven to 375°F. In a large cast-iron skillet, add olive oil over medium heat and sauté 3 thinly sliced cloves of garlic until fragrant, about 1-2 minutes.
- Add a can of fire-roasted tomatoes to the skillet and season with salt, pepper, and crushed red pepper. Simmer for 5 minutes.
- Add the baby spinach and simmer until the spinach begins to wilt. Add the beans and basil to the mixture, then top with mozzarella and parmesan cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden brown. Allow it to cool for a few minutes, then serve directly from the skillet with your choice of dipping accompaniments.
