Ingredients

  • 2 lb green beans, chopped in half
  • 6 tbsp butter
  • 4 scallions, finely chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup flour
  • 2 cups whole milk
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 3 oz bacon, chopped
  • 4 oz sliced pimientos
  • 2 tsp Worcestershire sauce

Directions

  • Preheat your oven to 375°F. In a large pot, boil the green beans until they become tender. Drain and set aside.
  • In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the scallions and cook for 3 minutes until wilted. Then add the breadcrumbs and toast until they become golden brown. Remove and set aside.
  • In a large pot, melt the remaining butter. Slowly sprinkle in the flour and whisk for about 2 minutes. While whisking, slowly pour in the milk and continue whisking until the mixture thickens. Remove from the heat.
  • Stir in the cheddar and mozzarella cheeses until melted and smooth. Add in the pimientos, bacon, Worcestershire sauce, and green beans; continue stirring.
  • Remove from the stove and transfer the contents to an oven-safe baking dish. Sprinkle with cooked scallions and breadcrumbs. Bake for 20 minutes until the casserole is bubbly and thoroughly heated.
