Ingredients

  • 18 oz potato gnocchi
  • 25 oz vodka pasta sauce
  • 1 cup breadcrumbs
  • 2 tbsp extra virgin olive oil
  • 1 1/2 cups mozzarella cheese, cut into chunks
  • 5 oz calabrese spicy salami, sliced
  • 2 tbsp fresh basil leaves, chopped
  • 1/2 cup Parmesan cheese, grated

Directions

  • Preheat your oven to 375°F and lightly oil a large oven-safe baking dish to prevent sticking.
  • In a large mixing bowl, combine the uncooked gnocchi and the jar of vodka pasta sauce. Gently stir until all of the gnocchi is evenly coated in sauce. If the mixture is too thick, add a small splash of water.
  • Fold in the sliced salami and half of the mozzarella chunks, mixing until they are evenly distributed throughout the gnocchi. The salami will release oils as it bakes, adding a rich and smoky heat to the dish.
  • Pour the gnocchi mixture into the prepared baking dish and spread it out evenly with a spatula. Scatter the remaining mozzarella chunks evenly over the top so they melt into the pasta.
  • In a small bowl, mix the breadcrumbs with one tablespoon of olive oil until the crumbs are lightly coated. Sprinkle this mixture evenly over the gnocchi. Drizzle another tablespoon of olive oil over the top for extra crispiness.
  • Place the dish in the preheated oven and bake uncovered for 15-20 minutes. Once baked, remove from the oven and immediately sprinkle with grated Parmesan cheese. Let the dish cool for a few minutes, then garnish with fresh chopped basil just before serving.
