Ingredients
- 1 red onion, sliced
- 1 lemon, sliced
- 20 oz marinated artichokes
- 32 oz sweet red pepper hulls, drained
- 6 boneless chicken thighs
- 2 tbsp extra virgin olive oil
- 1/2 cup feta cheese, crumbled
- 1/4 cup fine sea salt
- 1/4 cup fresh parsley
- 1/4 tsp Italian seasoning
- 1/4 tsp ground black pepper
Directions
- Preheat your oven to 400°F. Season the chicken thighs with salt and pepper on both sides. For enhanced flavor, rub the seasoning directly into the meat.
- On a large baking sheet, drizzle the extra virgin olive oil evenly across the entire surface. Add the chicken thighs, sliced onion, peppers, artichokes, lemon, and parsley. Sprinkle with Italian seasoning.
- Transfer the baking sheet to the preheated oven and bake for one hour, or until the chicken thighs are fully cooked through and have reached an internal temperature of 165°F.
- Remove the sheet from the oven and sprinkle the feta cheese on top. Serve the dish directly from the baking sheet or transfer to a serving platter. This meal pairs wonderfully with a side of rice, couscous, or a simple green salad.
