Ingredients

  • 1 red onion, sliced
  • 1 lemon, sliced
  • 20 oz marinated artichokes
  • 32 oz sweet red pepper hulls, drained
  • 6 boneless chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fine sea salt
  • 1/4 cup fresh parsley
  • 1/4 tsp Italian seasoning
  • 1/4 tsp ground black pepper

Directions

  • Preheat your oven to 400°F. Season the chicken thighs with salt and pepper on both sides. For enhanced flavor, rub the seasoning directly into the meat.
  • On a large baking sheet, drizzle the extra virgin olive oil evenly across the entire surface. Add the chicken thighs, sliced onion, peppers, artichokes, lemon, and parsley. Sprinkle with Italian seasoning.
  • Transfer the baking sheet to the preheated oven and bake for one hour, or until the chicken thighs are fully cooked through and have reached an internal temperature of 165°F.
  • Remove the sheet from the oven and sprinkle the feta cheese on top. Serve the dish directly from the baking sheet or transfer to a serving platter. This meal pairs wonderfully with a side of rice, couscous, or a simple green salad.
