This delicious Chicken Florentine Pasta is packed with flavor from cannellini beans to artichoke hearts, tossed in a tomato sauce with your favorite pasta.

Ingredients
- 3 tbsp Extra Virgin Olive Oil
- 1 lb Chicken Breast, cut into 1-inch chunks
- 1 tbsp Nonpareil Capers
- ½ cup Cannellini Beans, drained and rinsed
- 1 can Quartered Artichoke Hearts (14 oz), drained and rinsed
- 1 can Italian Crushed Tomatoes (28 oz)
- 2 cups Spinach, coarsely chopped
- 1 lb Pasta
- Fine Sicilian Sea Salt, to taste
- Ground Black Pepper, to taste
- ¼ cup Basil, chopped, optional
Directions:
- Heat oil in a large pan over medium-high heat.
- Add cut chicken breasts and brown 3-4 minutes, then add capers, beans and artichokes. Cook an additional 3-4 minutes.
- Add tomatoes, rinse can with water and add to pan, then cover and reduce heat to medium.
- Simmer 15 minutes, adding spinach to pan during last 5 minutes.
- Cook pasta according to package directions.
- Drain pasta, add to sauce and toss to combine.
- Top with a drizzle of extra virgin olive oil and basil, if desired. Serves 4.
