Ingredients

  • 1 tsp minced garlic
  • 1 tsp white onion, diced
  • 1/2 cup white button mushrooms, sliced
  • 1/2 cup pepperoncini, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 lb chicken sausage links, sliced
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup dry white wine
  • 1/4 cup sherry cooking wine
  • 2 tsp fine sea salt
  • 2 tsp ground black pepper
  • 1 lb capellini pasta
  • 2 oz Parmesan cheese, grated
  • 1 tsp basil, finely chopped
  • 1 tsp fresh parsley

Directions

  • Heat a non-stick skillet over medium heat. Cook the sausage links for about 12-16 minutes until the sausage is browned, then slice the links at an angle about a half-inch thick.
  • Raise the cooking temperature to high heat and add the olive oil, sausage, garlic, onion, and mushrooms. Cook until all the ingredients are browned. Then, add the pepperoncini, tomato, white wine, and sherry wine and simmer.
  • While the mixture is cooking, use a large saucepan to cook the pasta according to the package instructions.
  • Return to the skillet and add the cheese, basil, parsley, salt, and pepper. Continue cooking for another minute.
  • Add the pasta to the skillet and mix until all the ingredients are thoroughly combined. Plate and serve warm.
