- 4 eggs
- 4 brioche rolls
- 4 chicken sausage patties
- 12 oz roasted red peppers
- 4 tsp hot cherry pepper spread
- 1/4 cup Parmesan cheese
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 1/2 cup baby arugula
Directions
- Cook the chicken sausage patties in a skillet over medium heat until they are browned and cooked through. This typically takes 5-7 minutes per side, depending on the thickness of the patties. Once cooked, set them aside on a plate lined with paper towels to absorb any excess grease.
- Heat a non-stick skillet over medium heat and crack the eggs into the pan, taking care not to break the yolks. Fry the eggs for 2-3 minutes until the whites are set, but the yolks are still runny. Remove the fried eggs from the skillet and set them aside.
- Slice the brioche rolls in half horizontally. Assemble the sandwiches by spreading the hot cherry pepper spread on each roll’s bottom half. Top each roll with a cooked sausage patty and a fried egg. Add roasted peppers and a sprinkle of grated Parmesan cheese on top of the fried egg.
- Season the sandwiches with salt and pepper, then place a handful of arugula on top of each sandwich. Place the other halves of the brioche rolls on top to finish the sandwiches. Plate and serve warm.
