Ingredients

  • 1 lb penne pasta
  • 2 tbsp extra virgin olive oil
  • 1 onion, thinly sliced
  • 3 bell peppers, sliced into strips
  • 2 lb chicken sausage links, sliced into rounds
  • 25 oz marinara pasta sauce
  • 1 tsp Italian seasoning
  • 3 garlic cloves, minced
  • 1/2 tsp garlic powder
  • 1/2 tsp crushed red pepper
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 4 oz fresh parsley, chopped
  • 1/3 cup Parmesan cheese, grated

Directions

  • Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  • In a large, deep skillet, heat olive oil over medium heat. Add the chicken sausage and cook for about 6-8 minutes until browned on all sides. Remove the sausage and set it aside.
  • In the same skillet, add the onions and peppers and cook for 5 minutes until they are softened. Stir in the garlic and cook for another 1-2 minutes until fragrant. Stir in the Italian seasoning, garlic powder, red pepper flakes, salt, and black pepper. Return the sausage to the skillet and pour in the marinara sauce.
  • Reduce the heat to low and let everything simmer for 15-20 minutes. Add the cooked penne to the sauce and toss to coat evenly. Top with freshly grated Parmesan cheese and chopped parsley.
