Ingredients
- 1 lb penne pasta
- 2 tbsp extra virgin olive oil
- 1 onion, thinly sliced
- 3 bell peppers, sliced into strips
- 2 lb chicken sausage links, sliced into rounds
- 25 oz marinara pasta sauce
- 1 tsp Italian seasoning
- 3 garlic cloves, minced
- 1/2 tsp garlic powder
- 1/2 tsp crushed red pepper
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 4 oz fresh parsley, chopped
- 1/3 cup Parmesan cheese, grated
Directions
- Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large, deep skillet, heat olive oil over medium heat. Add the chicken sausage and cook for about 6-8 minutes until browned on all sides. Remove the sausage and set it aside.
- In the same skillet, add the onions and peppers and cook for 5 minutes until they are softened. Stir in the garlic and cook for another 1-2 minutes until fragrant. Stir in the Italian seasoning, garlic powder, red pepper flakes, salt, and black pepper. Return the sausage to the skillet and pour in the marinara sauce.
- Reduce the heat to low and let everything simmer for 15-20 minutes. Add the cooked penne to the sauce and toss to coat evenly. Top with freshly grated Parmesan cheese and chopped parsley.
