Ingredients
- 12 oz potato gnocchi
- 1 cup cherry tomatoes
- 1 red onion, cut into wedges
- 2 tbsp extra virgin olive oil
- 7 oz basil pesto sauce
- 8 oz chicken sausage links, sliced
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 2 tsp fine sea salt
- 1 tsp ground black pepper
Directions
- Preheat your oven to 425°F. On a large sheet pan, combine the gnocchi, sausage, cherry tomatoes, and onion.
- Spread everything out in a single layer and drizzle with olive oil. Season with the salt, pepper, Italian seasoning, and garlic powder.
- Move the sheet pan to the preheated oven and roast for 25-30 minutes, until the sausage is cooked through and the gnocchi is golden and crisp at the edges. Remove from the oven and toss immediately with pesto until well coated.
- Transfer the pasta to a serving dish and top with Parmesan cheese.
