Ingredients
- 14 oz artichokes
- 2 tbsp extra virgin olive oil
- 2 tbsp basil pesto sauce
- 2 tsp pignoli nuts
- 1 tsp Italian seasoning
- 1 cup ricotta cheese
- 1 lemon, juiced
- 2 garlic cloves, minced
- 1/4 cup Parmesan cheese
Directions
- Preheat your oven to 450°F. In a mixing bowl, combine the artichokes with the olive oil, Parmesan cheese, minced garlic, and Italian seasoning until they are evenly coated.
- Spread the mixture onto a baking dish and bake for 10 minutes. Afterward, turn the artichokes over and continue baking for another 10 minutes until they are crispy and golden.
- While the artichokes are in the oven, whip together the ricotta cheese, pesto, and lemon juice until the mixture is light and fluffy. Once the artichokes are done, gently flatten each one and generously spread them with the whipped ricotta mixture.
- Finish by sprinkling toasted pine nuts over the top for an added crunch.
