Ingredients
- 1 lb ground sausage
- 1 tbsp extra virgin olive oil
- 24 oz traditional passata
- 1 tsp Italian seasoning
- 1 onion, chopped
- 3 celery stalks, diced
- 2 carrots, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 lb gnocchi pasta
- 3 cups fresh spinach
- 1/2 cup Parmesan, grated
- 2 tsp fine sea salt
- 1 tsp ground black pepper
Directions
- Start by heating the extra virgin olive oil in a large pot over medium heat. Add the ground sausage and cook until browned. Once the sausage is fully cooked, remove it and set aside.
- In the same pot, add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
- Stir in the garlic and cook for another minute until it becomes fragrant. Add the sausage back to the pot and mix in the Italian seasoning, salt, and pepper.
- Pour in the passata, chicken broth, and spinach. Stir to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes. Stir in the gnocchi and cook for an additional 3-5 minutes until the gnocchi is tender and floats to the top.
- Top with Parmesan cheese and serve warm.
