Ingredients
- 1 tsp oregano
- 2 tbsp red wine vinegar
- 2 garlic cloves, minced
- 1 lemon, juiced
- 1 red onion, cut into chunks
- 1 bell pepper, cut into pieces
- 1 cup cherry tomatoes
- 1 1/2 lb chicken breasts, cut into cubes
- 14 oz quartered artichoke hearts, drained
- 1/4 cup extra virgin olive oil
- 2 tsp fine sea salt
- 2 tsp ground black pepper
- 2 tbsp fresh parsley, chopped
- 10 oz hummus, for dipping (optional)
Directions
- In a large bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, garlic, salt, and pepper. Add the chicken, toss to coat, and let it marinate for at least 30 minutes.
- Preheat your grill to medium-high heat. Thread the marinated chicken, artichoke hearts, cherry tomatoes, red onion, and bell pepper onto skewers.
- Grill the skewers for 12-15 minutes, turning occasionally, until the vegetables are lightly charred and the chicken has reached an internal temperature of 165°F. Transfer the skewers to a serving platter.
- Sprinkle with chopped parsley and serve with hummus on the side if desired.
