Ingredients
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, smashed
- 1/2 yellow onion, thinly sliced
- 10 oz sun-dried tomatoes, drained
- 1 tbsp nonpareil capers, drained
- 2 bone-in pork chops
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 3 sprigs fresh rosemary
- 2 tbsp fresh parsley, chopped
Directions
- Begin by seasoning pork chops with salt and pepper. Set aside 3 crushed garlic cloves. In a cast iron skillet, heat olive oil over medium-high heat.
- Add the seasoned pork chops, crushed garlic, and fresh herbs to the skillet. Cook the pork chops for about 4-5 minutes on each side until a golden crust forms.
- Set the cooked chops aside and cover with foil. In a mixing bowl, combine sliced sweet yellow onion, sun-dried tomatoes, and capers. Add this mixture to the skillet and stir until onions begin to turn translucent.
- Cover the pork chops with the sun-dried tomato mixture, sprinkle with chopped fresh parsley, and serve warm.
