Ingredients
- 1 lb boneless chicken breasts
- 1/2 cup flour, for coating
- 2 eggs, beaten
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 1/2 cup white wine
- 1/4 cup olive oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 3/4 cup sliced hot cherry peppers
- 1 cup all-purpose chicken broth
- 2 tbsp fresh parsley, chopped
Directions
- Preheat your oven to 375°F. Start by seasoning the chicken breasts with salt and black pepper. Dredge the chicken with a mixture of beaten eggs, then coat with flour.
- Cook the chicken breasts in a skillet with olive oil until they turn golden brown, then set them aside. Deglaze the skillet with white wine, add chopped onions and minced garlic, and sauté until softened.
- Add sliced peppers, cooking until they’re tender. Pour the broth in with the pepper liquid and let it simmer to reduce slightly. Return the chicken to the skillet, then cover and bake it until it reaches an internal temperature of 165°F. Garnish with chopped parsley before serving.
