- 1 tbsp extra virgin olive oil
- 2 bell peppers, chopped
- 1/2 cup onion, chopped
- 1 lb ground round
- 2 garlic cloves, minced
- 1 1/2 tsp Italian seasoning
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
- 1/4 cup beef broth
- 1/4 cup marsala wine
- 2 tbsp tomato paste
- 1 cup mozzarella cheese, shredded
- 1 baguette, cut into 4 pieces
- 2 tsp fresh parsley
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers and onion and cook for 3-5 minutes, until the vegetables become soft. Add the ground round and cook until it is no longer pink; break up the meat as it cooks to ensure the internal temperature reaches at least 160°F.
- Add the garlic, Italian seasoning, salt, and black pepper. Cook for 1 minute, until fragrant. Add the beef broth, marsala wine, and tomato paste. Bring the mixture to a simmer.
- Reduce the heat to low and simmer for 5-10 minutes, until the liquid is reduced. If you’d like a saucier mixture, partially cover the pan while cooking.
- Spoon the beef mixture onto the baguette and top with mozzarella cheese. Add parsley to each sandwich and serve warm.
