This delicious Italian-American comfort food is simple and inexpensive to make.

Ingredients
- 4 thin sliced Italian pork cutlets
- Salt & pepper
- 3/4 cup flour
- 3 large eggs
- 2 1/2 cups Italian breadcrumbs
- 2 tsp dried oregano
- Extra virgin olive oil for frying
- 1 oz Parmesan cheese
- 1 1/2 cups tomato sauce
- 4 oz shredded mozzarella
- 1 handful of fresh basil leaves
Directions
- Preheat the oven on broil.
- Pat meat dry with a towel; in one bowl, whisk together the eggs with the salt and pepper, and in a different bowl, combine parmesan and breadcrumbs.
- Dip pork cutlets in the wet mixture, then in the dry mix, and sit on a rack
- Heat oil over medium heat in a pan, and carefully add a few cutlets. Fry for 2.5 minutes on each side. Repeat until done and place cutlets on a rack.
- Place cutlets in an oven-safe dish. Top cutlets with tomato sauce and mozzarella .
- Broil until the cheese melts.
- Top with some basil, and enjoy!
