This delicious Italian-American comfort food is simple and inexpensive to make.

Ingredients

  • 4 thin sliced Italian pork cutlets
  • Salt & pepper
  • 3/4 cup flour
  • 3 large eggs
  • 2 1/2 cups Italian breadcrumbs
  • 2 tsp dried oregano
  • Extra virgin olive oil for frying
  • 1 oz Parmesan cheese
  • 1 1/2 cups tomato sauce
  • 4 oz shredded mozzarella
  • 1 handful of fresh basil leaves

Directions

  • Preheat the oven on broil.
  • Pat meat dry with a towel; in one bowl, whisk together the eggs with the salt and pepper, and in a different bowl, combine parmesan and breadcrumbs.
  • Dip pork cutlets in the wet mixture, then in the dry mix, and sit on a rack
  • Heat oil over medium heat in a pan, and carefully add a few cutlets. Fry for 2.5 minutes on each side. Repeat until done and place cutlets on a rack.
  • Place cutlets in an oven-safe dish. Top cutlets with tomato sauce and mozzarella .
  • Broil until the cheese melts.
  • Top with some basil, and enjoy!
