Ingredients
- 12 oz orzo pasta
- 2 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 28 oz crushed tomatoes
- 14 oz chicken broth
- 1 bay leaf
- 3 cups fresh spinach
- 1 lb sausage links
- 1 cup mozzarella cheese, grated
- 1/4 cup Parmesan cheese, grated
- 1/2 tsp Italian seasoning
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 4 oz fresh basil leaves
Directions
- Heat olive oil in a large, deep skillet or pot over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
- In the same pot, add the onion and garlic. Sauté for 3-4 minutes until the onion is translucent. Stir in the orzo and cook for 1-2 minutes until slightly toasted.
- Add the crushed tomatoes, chicken broth, and a bay leaf, then bring the mixture to a simmer. Cover and cook for 10-15 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid. Add the spinach and stir until wilted, then mix in the Italian seasoning, salt, pepper, mozzarella, and Parmesan cheese.
- Remove the bay leaf, garnish with fresh basil leaves, and serve immediately.
