Ingredients
- 2-3 lb center-cut pork ribs
- 2 sweet potatoes, peeled and cubed
- 1 onion, diced
- 3 tbsp minced garlic
- 1 can cannellini beans, drained
- 1 1/2 tsp Italian seasoning
- 1/2 tsp fine sea salt
- 1/2 tsp ground black pepper
- 1 can all-purpose chicken broth
- 1 jar pepperoncini, sliced
- 1 tbsp vegetable paste
- 2 cups kale
Directions
- Place potatoes, onion, broth, beans, kale, garlic, pepperoncini, and vegetable paste into a slow cooker.
- Add pork and spices to top of the vegetables. Cook, covered, on low until pork is tender (8 to 10 hours).
- Once cooked, remove the pork and shred. Return the pork to the slow cooker and combine it with the stew for an additional 10 minutes.
