This simple Italian steakhouse classic is packed with flavor and makes an impressive meal that’s easy enough for a weeknight dinner.

Ingredients
- 1½ lbs USDA Choice Angus Skirt Steak (on sale this week!)
- 5 oz fresh arugula
- 1 cup cherry tomatoes, halved
- ½ cup Pecorino Romano cheese, shaved
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic glaze
- 1 tsp sea salt
- ½ tsp freshly ground black pepper
- 1 tsp garlic powder
- 1 lemon, cut into wedges
Directions
- Remove the skirt steak from the refrigerator 20 minutes before cooking.
- Pat the steak dry and season both sides with sea salt, black pepper, and garlic powder.
- Heat a grill or cast-iron skillet over high heat. Drizzle the steak with olive oil.
- Cook the skirt steak for 3 to 4 minutes per side for medium-rare, or to desired doneness.
- Transfer the steak to a cutting board and let rest for 5 minutes.
- Arrange the arugula on a large serving platter and top with the cherry tomatoes.
- Slice the steak thinly against the grain and place over the arugula.
- Top with shaved Pecorino Romano cheese.
- Drizzle with balsamic glaze and a little extra olive oil. Serve with lemon wedges.
